Portuguese Chourico Cabbage Potato Skillet Recipe

Ingredients:
1 lb (450g) chourico sausage, sliced
1 small head of cabbage, thinly sliced
4 medium potatoes, diced
1 large onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon cumin
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)

Instructions
Prepare Ingredients:
Slice the chourico sausage into rounds.
Thinly slice the cabbage.
Dice the potatoes into small, bite-sized pieces.
Dice the onion and mince the garlic.

Cook Chourico:
Add oil and heat a large skillet over medium-high heat.
Add the chourico slices and cook until browned and slightly crispy, about 5-7 minutes.
Remove the chourico from the skillet and set aside, leaving the rendered fat in the skillet.

Cook Potatoes:
Add the diced potatoes to the skillet with the chourico fat.
Cook over medium heat, stirring occasionally, until the potatoes are golden brown and tender, about 10-15 minutes.

Add Aromatics:
Add the diced onion and minced garlic to the skillet with the potatoes.
Cook until the onion is soft and translucent, about 5 minutes.

Add Cabbage:
Add the sliced cabbage to the skillet.
Season with smoked paprika, cumin, salt, and pepper.
Stir well to combine all the ingredients.

Combine and Cook:
Return the cooked chourico to the skillet.
Stir everything together and cook for an additional 5-7 minutes, until the cabbage is tender but still slightly crisp.
