INSTRUCTIONS - FEEDING YOUR SOURDOUGH STARTER
1-3-3 ratio this is like giving your starter a larger "buffet" to feast on. This ratio will slow things down and wakeup your starter and refine the flavor profile and begin your sourdough bread recipe in about 12-18 hours.
Add as much starter as possible from the container to a clean glass jar or bowl. Measure 165 grams warm spring water in a separate container. Add small amounts of the water to the starter container, cover, and shake to loosen any remaining starter. Pour into the jar. Repeat until all the 165 grams of water is used up, and starter is transferred.
Measure 165 grams of unbleached bread flour and add to your jar or bowl. Stir and mix well. Cover loosely to allow gases to escape.
Put your starter on your kitchen counter overnight. This will get your starter active and healthy in about 12-18 hours depending on the temperature of your room.
How to determine when your starter is ready.
The Goal: Your starter should at least double in size within 12-18 hours of feeding. Pro-Tip: Put a rubber band around your jar at the "starting line" right after you feed it. This gives you a clear visual of exactly how far it has traveled.
The Bubble Structure
Look through the side of your glass jar.
The Ready Sign: You should see a dense network of bubbles varying in size. Domed or flat with bubbles. When you noticed your starter just starting to sink or concave, it's ready. When you stir it or scoop some out, it should feel light, aerated, and almost like a thick chocolate mousse or marshmallow fluff, rather than a heavy paste.
MAINTAINING SOURDOUGH STARTER
Keep your unused starter in the fridge. When you are ready to bake again use the 1-3-3 ratio. (Example 20g starter – 60 grams water – 60 grams flour.) Let rise for 12-18 hours. You can always mix unused starters together and store them in one jar in the fridge indefinitely.
